
This is a great lentil pottage and my favorite vegetarian dish. I have to give props to my pal Ali who hooked me up with this one a while back. I think she got it online somewhere...maybe Epicurious? I'm not sure but it's easy, delicious and healthy so its origins are really beside the point.
Honey Baked Lentils
2 cups Water
2 Tbsp Tamari
2 Tbsp Honey
2 Tbsp Olive Oil
1 tsp Garlic
1 tsp Ginger
Salt & Pepper
1 cup Lentils (brown or red are called for, but here I used the little green French ones and it was great)
Approx 2 cups of chopped veggies (I like to use potatoes, carrots & zucchini)
Put everything except the lentils & veggies in a baking dish that has a lid, and use a whisk to blend it.

Chop up all your veggies. I only used half the onion.


Add the lentils and veggies.

Give it stir and cook covered for 1 1/2 hours at 350 degrees.
I like to serve with either whole wheat pita bread or over brown rice. It's delicious and makes for good leftovers, too.
